my blogiversary && a gift to you!

Today is my bloggy birthday!  Happy blogday to me!  My first ever post was a Veggie & Turkey Bacon Frittata with Muenster Cheese.  So - I figured, I'd share another egg recipe with you today.  This is the way my Dad cooked his eggs, and one of my honey's favorite ways to eat them: a good 'ol egg sandwich!

Dad preferred his eggs over easy, a little bit more done then sunny side up, yet not fried hard completely.  Set out your mayonnaise, cheese, and other sandwich add ons first.  Then get out a pan, spray it with PAM or use some olive oil, bacon fat or butter and warm up your pan.  While your pan is getting nice and hot, toast your bread.  When the bread is toasting crack your eggs (Mr. Instant likes 3 eggs per sandwich), and season with Uncle Bob's Seasoning Salt.

Once the bread is done toasting, smear some mayonnaise on it and cheese (Mr. Instant likes mayo and cheese on both slices of bread).  Flip your eggs and let them cook a little bit more.

 If you're not caught up to speed with everything and are nervous your eggs are going to wait in the pan too long, simply turn off the stove.  Eggs will still cook, but shouldn't overcook.  Place the eggs in the sandwich and enjoy savory heaven!

I know that everyone says oh this seasoning salt is the best, no this one is the best.. oh wait, no this one is the best!  This week I just got two separate orders from a former co-worker who is a Sous Chef.  He has had my salt in the past as a Christmas gift and I made it for the kitchen for a special they were running.
