This is the last part of my Resolution Series (though I will (and have) be connecting my progress to the COMPLETE 2013 RESOLUTION SERIES.)
For me, this has been a successful blogging year. Even with the sabaticals, I've come back to the blog and really endeavor to put out decent and relevant content. This coming year I want to bring more to my readers, grow my readership and really put myself out there. A big part of this will be accountability posts to my resolution series (PS: I already have one lined up!). So blogging goals:
1. No sabaticals for 2013 (unless it is a family emergency)
2. Linking to more parties (I need to find an efficient way to do this! Tips anyone?)
3. Making blogging friends (I've tried a few times to spark conversations or gain blogging friends, but have been unsuccessful so far) A few weeks ago, Julie from Julie Ann Art wrote a post about this exact topic and it was so inspiring and encouraging to continue to try and to use different venues!

{eat me} Dad's Famous Corn Fritters
So I think this is the first family recipe that I am sharing on this blog, just in time for New Year's Eve. We make these fritters at just about every holiday get together. It is a staple side dish (if it makes it to the table). These babies seriously need to be policed!!
Dad's Famous Corn Fritters (method):
1 cup of Flour
1 tsp Baking Soda
1 tsp Salt
1 can of Corn Kernels
Reserved Corn juice
Milk
Kosher Salt
First mix the flour, baking soda and salt in a bowl. Drain and reserve the juice from the can of corn into a measuring cup and pour the kernels into the mixing bowl with the flour mixture. Add milk to make one cup of liquid. Mix it into the batter. NOTE: I use this as a guide as I usually triple the recipe. After mixing the triple batch, the batter usually seems to have more corn than batter. If this happens to you as well, add more flour and milk until the batter isn't too runny and not too thick. Let the batter set up in the fridge for 30 minutes. Once the batter has set up heat some oil in a deep fryer or your favorite frying method and fry the fritters by the spoonful. Once you start to see the fritters becoming golden brown flip them over for a few more minutes before taking them out. Once out of the fryer salt with Kosher salt. Let cool for a couple minutes and try to let some of the fritters make it to do dinner spread/buffet!

Business Resolution {etsy shop}
To date I've started four shops. In November of this year, I finally opened the shop that I should have opened from the very beginning. A salt shop featuring my dad's famous seasoning salt. For years, friends and acquaintances have pleaded with my dad and myself to market the salt. After my dad passed in 2009 I knew I needed to keep the salts going and get it out to more people.
I've had the best start with this etsy shop than any other. I am excited to grow several different product lines in the shop this next year.

{Become Organized} Organizing Revolution Challenge

Four days left till the New Year - and the countdown is on. Breakfast is the most important meal of the day. I'm sure this is not new to you and you have heard it all (or most) of your life. When you wake up late, need to get your step son ready for school, have to look half way decent for work and have a ton of traffic to get through in the morning - quite often breakfast is the first thing scratched off the list.

Personal Resolution (BECOME ORGANIZED)
I hope you all had yourselves a MERRY LITTLE CHRISTMAS! I had quite a busy one, but it was enjoyed with my family and the ones that I love! We have less than a week in 2012, and so I'd really like to post up my resolutions (to help me be more accountable to them, and work towards them).
Today I'll talk about what {Becoming Organized} means to me! There is quite a bit of clutter in my house. Things are scattered wherever they can fit. There isn't much order. Ever since we moved into our home I've wanted to organize my linen closet, but it has never happened. I did do some re-organization of my kitchen, but that hasn't been completed.
Up until now I haven't decided whether I will use some tools I've found on Pinterest or Organization blogs I follow. If not, I will just have to come up with my own system and take one part of the house at a time instead of becoming overwhelmed by the whole thing.

Last Minute Co-Worker Gifts
Happy Thursday yall! Woo, one more day till Friday and then the final weekend before Christmas is here.
I'm happy. With all the evil in the world, I am so thankful for everything God has provided to me. My heart still hurts for Newtown - && I trust the Lord is taking extra special care of them and that those children will not have to know go through any more hurt or pain living in this world causes.
I'm sure we have all scoured the blogs and Pinterest for fresh, exciting new takes on Christmas gifts for neighbors, friends, co-workers and loved ones. Though I don't have time for my own tutorials (or even recipes for that matter - my 9 to 5 is extra busy this time of year, and I'm doing some schooling), I do have time for a round up of gifts that caught my eye!

Personal Resolution (LEARN FRUGALITY}

If I have learned anything this year, it is the importance of frugality. It is a big responsibility to move out of your parents' house out on your own. Especially taking on responsibility for a child. Sometimes saving a couple cents here and there can seem so minute, but really it can make a world of a difference.
This coming year, I really want to be a good steward of my money. The savings that are offered in the mainland aren't offered here (meat savings, double coupons and whatever else), but I can still make an effort to use coupons and take savings whenever I can get them. The hardest thing for me this year with coupons is forgetting I have them and then having them expire. I would WAIT WAIT WAIT till they went on sale, and then they would expire.
One way I have started to be frugal this year is to make my own laundry detergent. I so LOVE not spending hundreds on Tide! I use the dry method (found here) and add Purex Crystals for scent and softening.
This coming year I need to keep a calendar for my coupons (and get a coupon wallet) and maybe phone alert reminders so that I am able to save extra money (even if I don't top a coupon with a sale price!) I'll get it one day!
Do any of you have any beginner (non-overwhelming) tips on frugality? I would love to hear them!

Personal Resolution {BE HEALTHY}
Has anyone noticed the new look of the blog? I was tired of the one that I had. I want to purchase a blogger template from etsy, but haven't decided on one out of the GAJILLION that are available.

This is the first of quite a few resolutions that I am prepping for to start off in the New Year. I am SO ready for 2012 to be over and for 2013 to get here (though I am savoring the Christmas season, and will be sad when it is over - the Mr. has been watching Hallmark and ABC Family movies with me just about every night, I hope I can keep him watching Hallmark movies after the season).
I have PERSONAL and BUSINESS resolutions. My first personal resolution is to {BE HEALTHY}. To make a long story short {this is a personal moment, I just now realized I'm about to share with the world} - I was an overweight kid most of my life. I played sports, but I was still the "big" girl. In college I joined LA Weightloss and lost roughly 60 pounds. That was AMAZING. And then I turned 21. And then my dad had cancer and it had become terminal. I became is sole caretaker. Maybe I'll share about that journey at a later date. Maybe the next anniversary of his going home to Jesus would be more relevant. That took a toll on my health. And ever since I've been stuck in this rut of gaining back the weight and keeping it on.
This year I am ready.. READY... RRREEEAAADDDYYYY to finally be healthy again. So what is my game plan you ask??
Prepare.. Prepare.. Prepare. This means when I get home from the grocery store, clean, cut & portion all veggies and vegetables. Take time one day a week to prep everything so that I can grab n go - after all .. life is busy!
I will definitely be using ideas from Pinterest. I hate fat free dressing, but ranch dressing mix with fat free greek yogurt, YES I CAN! Salad and dressing is so boring, not when you put it in a mason jar and layer different foods like rotisserie chicken (hi, Costco), halved cherry tomatoes, basil, low fat chese, nuts etc!
The second portion to my {BE HEALTHY} resolution is to be more active. My employer participates in a gym program that Kaiser offers where you can sign up for a gym membership for $100/year. So come January, hello 24 Hour Fitness!

Chocolate Peanut Butter Nut Candies
As a kid (ok scratch that, I lie.)... Since FOREVER, I have loved See's Candies. I love the ambiance. I love the workers. && I LOVE the Chocolate. I could just go on and on about different candies, but let's get down to the nitty gritty!
One of my absolute favorites are the dark and milk chocolate covered peanuts. Salted peanuts, smooth creamy & dreamy chocolate. HELLO HI!! I can't leave the store without getting a cup of them. This Christmas I figured I would put my own spin on them by adding {peanut butter}!!
You need to go to your kitchen and make these right now. Seriously it takes you five minutes. Easiery than cake pops, cookie truffles, etc. No messy hands. Its easy, breezy, beautiful chocolate peanut butter bliss. (Yes I did just use a makeup tagline for chocolate)!
The recipe below is more of a method. You do what you like to these babies, the only way you can mess them up is if you overheat the chocolate. Ratios of chocolate to peanut butter to nuts is COMPLETELY up to you!
Chocolate Peanut Butter Nut Candies
2 chocolate bark squares (or 1 cup of chocolate chips)
2 tbsp peanut butter
1 to 1 1/2 cups of SALTED peanuts (or other nuts).
Melt the chocolate in a glass bowl, in a microwave in 30 second intervals. The longer you microwave, if it makes you feel better you can go at 15 second intervals, just don't OVERHEAT the chocolate. Once it is melted (you can aide this by mixing the chocolate, or attempting to after every heating interval), mix in the peanut butter to your desired taste! Once the mixture tastes (BOMB.COM) satisfies you, add in the nuts. Once the nuts are covered in chocolate, drop them by the spoonfuls onto parchment paper. Let dry in the refrigerator.

Peanut Butter Chocolate Salted Surprise Cookies
Christmas is in full swing at the Instant's home. This Christmas we've been gathered around the TV at night watching Christmas movies while sipping hot chocolate. On the weekends we've visited several Christmas lanes and house that have light shows. Christmas music is played throughout the day in the home, car and at work (thank you Pandora). And our kitchen has been churning out Christmas treats like I've never done before.
I stumbled upon a post from Dorothy at Crazy for Crust and she posted a review of her favorite holiday treats that she had done in the past. And out came a pinterest bomb on my Cookies board! This cookie really caught my attention because there was no flour or butter (which I am currently out of) in the recipe. Imagine that! I put a little spin onto her recipe though! The cookies that used the remainder of my flour and butter inventory were these Chocolate Salted Caramel cookies from Sally's Baking Addiction , they were so good I forgot to snap some pics. At any rate - I added the salted caramel effect to Dorothy's Peanut Butter Surprise Cookies.
Here is the recipe:
Peanut Butter Chocolate Salted Surprise Cookies
(adapted from Dorothy at Crazy for Crust)
1 cup of peanut butter
3/4 dark brown sugar
1 tsp baking soda
1 egg
1/2 cup chocolate chips
9-15 caramels
sea salt
Preheat your oven to 350 degrees Farenheit. Line a cookie sheet with parchment paper. Combine peanut butter, brown sugar, baking soda and egg. Mix until combined. Fold in chocolate chips. Scoop dough using a 1/2-1tbsp spoons and flatten with your hand. Place a caramel in the middle and sprinkle with sea salt. Bring the sides of the cookie up to form a ball and cover the caramel. Place on the parchment paper seam side up. Bake for 15 minutes. Let cool on cookie sheet pan. (NOTE: I found these cookies to be very soft and fragile, so I opted to leave them on the cookie sheet to cool instead of transferring to a wire rack).

CRAFTS: Christmas Bag Topper
Since October I've started to make treats for Lil Instant's class. So far I've done his birthday, Halloween and Thanksgiving. This is now something I look forward to - and a great way to check off my to do list from Pinterest :).
Lil enjoys it as well. He loves to give gifts to his teachers and classmates. These Christmas treats are just for his classmates. I'll be making something different for his teachers.
As I was walking through our local "dollar store," (We don't have actual dollar stores in Hawaii, the closest thing is a store called PriceBusters - where you can get things relatively cheap). I found Christmas tree Peepz there! They came in sets of 9 and were $1.50 each. So, 3 peepz per child and the class has 9 children in it, so $4.50 for Christmas treats?!?!?! SIGN ME UP!
Most bag toppers I found on Pinterest were from Etsy. While I do love etsy, I'm on a budget! I used Microsoft Publisher to create my toppers. If you like them send me an email and I can email you a PDF.

A Year's Worth of Reflection
At the end of November the Instants made a year living together. What a year that was. Every day we learn something new about each other. Every day we grow. Out of everything we experienced this year, the one thing I take from the year is learning how to love each other in new ways. Just the simple act of starting a shower for someone can brighten their
day - or coming home to a cooked meal, a little candlelight and Pandora.
My favorite memory was Valentine's Day. It was our first Valentine's Day and it could haven't been any better! Other highlights include the progress we have seen with Lil' Instant. Adding Pup-stant and Kit-stant to the Instant clan. Mr. Instant's sister got married. His other sister and niece moved here. I opened my etsy store (in November).
Though we're just starting December, I pretty much have my resolutions in place.
1. Learn frugality.
2. Become organized (especially in the finance department).
3. Be healthy.
4. LOVE
Throughout the month I will break down these 4 resolutions and what they mean to me. Have any of you thought of your resolutions so that you can prepare for them, come 2013?? I'd love to hear your resolutions!!

My favorite memory was Valentine's Day. It was our first Valentine's Day and it could haven't been any better! Other highlights include the progress we have seen with Lil' Instant. Adding Pup-stant and Kit-stant to the Instant clan. Mr. Instant's sister got married. His other sister and niece moved here. I opened my etsy store (in November).
Though we're just starting December, I pretty much have my resolutions in place.
1. Learn frugality.
2. Become organized (especially in the finance department).
3. Be healthy.
4. LOVE
Throughout the month I will break down these 4 resolutions and what they mean to me. Have any of you thought of your resolutions so that you can prepare for them, come 2013?? I'd love to hear your resolutions!!
