So I think this is the first family recipe that I am sharing on this blog, just in time for New Year's Eve. We make these fritters at just about every holiday get together. It is a staple side dish (if it makes it to the table). These babies seriously need to be policed!!
Dad's Famous Corn Fritters (method):
1 cup of Flour
1 tsp Baking Soda
1 tsp Salt
1 can of Corn Kernels
Reserved Corn juice
First mix the flour, baking soda and salt in a bowl. Drain and reserve the juice from the can of corn into a measuring cup and pour the kernels into the mixing bowl with the flour mixture. Add milk to make one cup of liquid. Mix it into the batter. NOTE: I use this as a guide as I usually triple the recipe. After mixing the triple batch, the batter usually seems to have more corn than batter. If this happens to you as well, add more flour and milk until the batter isn't too runny and not too thick. Let the batter set up in the fridge for 30 minutes. Once the batter has set up heat some oil in a deep fryer or your favorite frying method and fry the fritters by the spoonful. Once you start to see the fritters becoming golden brown flip them over for a few more minutes before taking them out. Once out of the fryer salt with Kosher salt. Let cool for a couple minutes and try to let some of the fritters make it to do dinner spread/buffet!
